Escabeche of spring peas with citrus, parsley, fennel & mint
 
First Course
 
Slowly roasted carrots au pistou, with arugula and carrot tops, garnished with shaved prosciutto, arugula & sunflower seeds
 
Main Course
 
Fines herbs rubbed Halibut, roasted and served over a brothy mélange of late spring beans 
with smoked tomato confit and shaved raw baby squash tossed in olive oil, orange juice, seasonal herbs and sea salt
 
Dessert
 
Crème fraîche panna cotta with cherries and a nutty crumble
